Strawberry-Lemonade Sorbet

This is such a refreshingly easy and quick treat which makes the best of strawberry season, extended by freezing the fruit at its peak.  It was inspired by a recent class at Sur la table featuring the powerful  Vitamix blender.

I’ve adapted the recipe using my own Mint Simple Syrup.    If you are lucky enough to have a bumper crop (store bought or home grown) of other delicious fruit such as raspberries, blueberries or peaches) I am sure they would make an equally tasty treat. 

Ingredients

1 pound frozen strawberries (blueberries, raspberries, peaches – must be frozen)

Place washed and cored berries in a zip-top freezer bag.  Close leaving a small space to insert a drinking straw.  Suck out as much remaining air as possible from bag with the straw.

Seal and freeze berries for later use in sorbets, smoothies, ice cream, etc.

1/3 cup simple syrup (chilled) – see my recipe for Mint Simple Syrup via video (or honey)

½ cup fresh lemon juice

Add the frozen fruit and simple syrup (honey) to blender jar.   Secure the lid with the tamper.  Start to process the machine on the lowest speed, slowly increasing the speed using the tamper to press the ingredients into the blades.  In about 20 – 25 seconds, the sound of the motor will change and four mounds should form.  The fruit should start to look crushed.  With the machine running, slowly add the lemon juice, using the tamper to combine all the ingredients. 

When the mixture is well combined and resembles sorbet, stop the machine.  If the mixture is too thick, add more simple syrup, a tablespoon at a time.  DO NOT over mix or melting will occur. 

Serve immediately.  Yield 4 servings.
