If bananas are one of nature’s most perfect fruits, I think carrots are one of her most perfect and versatile vegetables.  They come a variety of colors, shapes and sizes and are readily available in grocery stores and markets on a year round basis. Carrots are very reasonably priced and a great way to introduce kids (and adults) to tasty and healthy root crops.  One of my favorite ways  to use carrots are in juice blends.  If you’re new to juicing, this is one of my favorites – made with refrigerator staples and oh, So YumMe!

Rhonda's Newbie Juice

Recipe type: Fresh Juice
Cuisine: American
Serves: 2
  • 4 carrots
  • 2 apples
  • 2 stalks of celery
  • 2 lemons
  • 1 inch piece of ginger
  1. Use organic ingredients if possible.
  2. Wash and prepare ingredients.
  3. Peel lemons to eliminate possible bitter taste.
  4. Juice, following your machine instructions.
  5. Consume immediately or for a richer taste chill for an hour, then drink.
  6. Refrigerate any leftovers in an airtight container.
  7. Use within 24 hours.
  8. Enjoy!
